We grow several varieties of grapes and process those grapes in our winery.

We teach continuing adult education classes and workshops on developing and maintaining the vineyard.

Our Vines

Valvin Muscat

Developed by Cornell University, this is a mid-season white wine grape with a distinctive muscat flavor and we no objectionable bitterness.

We use this grape to produce our Valvin Muscat.

Country Spring Vineyard is one of the only vineyards in Texas with this vine.

Lenoir

Lenoir is a delicious sweet and juicy seeded grape that produces large clusters of small to medium size grapes. These grapes offer deep color, rich, brambly flavor and bright acidity.

We use this grape to produce our Lenoir and Rowdy Red.

Villard Blanc

A French-American hybrid, this grape produces a late-ripening white grape in large, loose, compound clusters and makes a fruity, mildly intense white wine

We use this grape to produce our Villard Blanc.

Mourvédre

An ancient Spanish grape, Mourvedre produces red wines that tend to have rich, dark plum and brambly berry notes, as well as occasionally assertive spice and a savory, often meaty characteristic. Passing hints of dried flowers like violets are also not uncommon.

We use this grape to produce our Mourvédre.

Cabernet Sauvignon

The world’s most widely recognized red wine grape, the Cabernet Sauvignon grape is small and thick skinned. The rich flavor and high tannin content in Cabernet Sauvignon make it a perfect partner to rich grilled meats, peppery sauces, and dishes with high flavor.

We use this grape to produce our Cabernet Sauvignon.

Roussanne

Roussanne is a white-wine grape named after its skin color (when ripe), a reddish-gold pigment that equates to the French word roux (meaning “russet”, or reddish-brown). It is characterized by herbal, tea-like, aromas. On the palate, it typically shows pears and honey with notable intensity.

We use this grape to produce our Roussanne.
